Pork Breakfast Sausage

I make it into patties for sausage, egg, and cheese sandwiches

I love a good breakfast sandwich. This breakfast sausage is my go-to when I crave a sausage, egg and cheese sandwich. Enjoy.

Ingredients:

3 lb. pork and pork fat 80/20 mix

1 tbsp. kosher salt

1 tbsp. dried sage

1 tsp. ground black pepper

1 tsp. brown sugar

1 tsp. dried thyme

1/2 tsp. dried marjoram

1/8 tsp. ground cloves

1/2 tsp crushed red pepper

1 tsp. dried garlic powder

Hog middle casings if desired

Steps:

1. Chill your meats together in the freezer while you setup your grinder with the coarse plate. Grind the chilled pork.

2. Mix all the ingredients with the ground pork. I do this by hand.

3. Shape into 18 patties or stuff into the hog casings. I then freeze the sausage for when I need it for breakfast. Make the patties thin so you can add it to a egg sandwich.
