Chicken Breakfast Sausage

A while back Chris found a breakfast recipe for Frittata that called for maple sausage. I came up with this chicken version to be used in the recipe. Its quite yummy. I hope you enjoy it. I use boneless skinless chicken thighs in all my chicken sausage recipes because its more moist and flavorful. You can pick them up at Costco.


3 lbs Boneless skinless chicken thighs

1 tsp Kosher Salt

1 small onion minced (approx 1/2 cup)

2 tsp dried sage

1 tsp dry mustard

1 tsp black pepper

1/4 cup maple syrup


1. Grind the chicken through 5/16 inch plate

2. Mix the ground chicken with all the other ingredients

3. Stuff into medium hog casings

4. Refrigerate or freeze for storage.
