Just in time for the Super Bowl football game in the United States. Sometimes you just need some comfort food. Buffalo wings is one of my go-to comfort foods. That's why I came up with this recipe. (perhaps pizza flavored sausage will be in the future....It's also a great comfort food!) Make a bunch of them, freeze them and use when a yummy craving exists. I give some cooking instructions at the end of the recipe.
Ingredients:
5 lbs skinless boneless chicken thighs (I get mine at Costco)
1/2 cup of your favorite hot sauce. I make my own from the garden, but Frank's RedHot is a good option
1 Tbsp of kosher salt
8 garlic cloves crushed thru garlic press
1 Tbsp of freshly ground black pepper
1 Tbsp crushed red pepper
1 Tsp onion powder
1 Tsp celery seeds
3 stalks celery finely chopped
Steps:
1. Make sure your chicken is well chilled and grind it thru your fine grinding plate. Put it back into the fridge to rechill it.
2. Add all herbs, spices, hot sauce, chopped celery and garlic to the ground chicken and mix it with your hands until evenly mixed.
3. Create meatballs about the size of an egg. Place the meatballs on a cookie sheet that has be coated with cooking spray.
4. Place the tray in the freezer until the meatballs are frozen. They put them in ziplock bags in the freezer for storage.
Serve with extra hot sauce and blue cheese dip. When you take them out of the freezer place them on a cookie sheet that is lined with tin foil that is sprayed with cooking spray, bake them in a 400 degree oven. If the meatballs are thawed figure on 30 minutes total cooking time, flipping halfway thru and if frozen, bake for 40 minutes also flipping 1/2 way thru the cooking time.
